Veggie Vietnamese-Style Sandwich

2 cups (500 mL) Europe’s Best® Imperial Blend, thawed
1/2 cup (125 mL) each matchstick carrot and cucumber
1/2 cup (125 mL) rice wine vinegar
2 green onions, thinly sliced
1/2 tsp (2 mL) each salt and sugar
1/4 cup (60 mL) mayonnaise
1 tbsp (15 mL) sesame oil
4 demi-baguettes, split and toasted
16 slices Yves Veggie Cuisine® Ham
1/4 cup (60 mL) packed fresh cilantro leaves
2 tbsp (30 mL) vegetarian hoisin sauce
4 tsp (20 mL) sriracha hot sauce

Star Product



  • Mix together Europe’s Best® Imperial Blend, carrot, cucumber, rice wine vinegar, green onions, salt and sugar. Let stand for 15 minutes; drain.  
  • Stir together mayonnaise and sesame oil; spread over bottom half of each baguette. Top with Yves Veggie Cuisine® Ham, pickled vegetables and cilantro. Drizzle with hoisin and hot sauce. Cap with top half of each baguette.


Add a vegan slice of cheese to the sandwich if desired.
